50ml Gente de Mezcal Espadín
25ml fresh lime juice
30ml Amaro Montenegro
1 tsp agave nectar
1 egg white (or chickpea water)
Twist of Lemon
Small tumbler or coupette
- Add ice to your glass to start cooling it
- Separate the egg white and add to your shaker
- Add the lime juice, Amaro, agave nectar and mezcal to the shaker
- Shake for 10-15 seconds
- Add the ice into the shaker and shake for an additional 10 seconds to create more cream foam
- Fine-strain into your chilled glass.
- Garnish with a few drops of Angostura bitters and if desired, top with a lime twist.
