AGUACHILE

INGREDIENTS

50ml Gente de Mezcal Espadín
4 pineapple cubes
4 cubes of cucumber
Freshly picked coriander leaves
1 jalapeño sliced
25ml agave syrup
30ml fresh lime juice
Chilli salt

GARNISH

Coriander leaves

GLASS

Old Fashioned glass or whisky tumbler

METHOD

  1. Run a lime slice around the rim of a tall glass.
  2. Tip salt into a small plate and press the rim into the salt until covers the whole rim of the glass the whole way round
  3. Add ice to your glass to start cooling it
  4. Add the sliced chilli, pineapple, cucumber, coriander, lime juice, agave nectar and mezcal to your shaker
  5. Add ice and shake for 10 seconds
  6. Remove ice cubes from your chilled glass and replace them with fresh ones
  7. Fine strain the shaken drink into your glass.
  8. If desired, garnish with fresh coriander leaves
